Chicken Bharta

Chicken Bharta is a Mughlai dish in which chicken pieces are almost mashed and is quite rich with eggs and spices to bring delectable flavor. it is an ideal and wonderful recipe for occasions.


• Chicken breast boneless: 500gm
• Garlic: 2 cloves
• Onion: 1/4th
• Bay leaf: 1
• Black peppercorn:5-6
• Cinnamon: 1inch stick
• Salt
• Water

To make the gravy:

  • 1 big chopped onion
  • 1/2 tbsp garlic paste
  • 1/2 tbsp ginger paste
  • 2 medium Finely chopped Tomatoes
  • 3 tbsp cashew nut paste
  • 3 tbsp yogurt
  • Fresh cream: 2 tbsp
  • 2-3 cinnamon sticks
  • 4 cardamom pods
  • 5-6 cloves
  • 2 small bay leaves
  • 1 tbsp kashmiri red chili powder
  • 1/2tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1tbsp butter
  • 1 chopped egg
  • 1/2tsp kasuri methi/dry fenugreek leaves
  • Salt to taste
  • Few chopped coriander leaves
  • 1 egg for garnishing
  • Boil chicken pieces with garlic cloves, a quartered onion, cardamom, black peppercorns, bay leaf, cinnamon sticks and salt.
  • Once they are cooled down shred the chicken into thin strips using hand or fork. Give good time to shred the chicken. It is the most time consuming part during the whole bharta making process. Keep them aside.
  •  In a  pan heat 3 tbsp of oil.
  • when the oil is hot add bay leaf, cinnamon sticks, cardamom, cloves and saute for few seconds untill the spices release a nice aroma.
  • Then add chopped onion and salt. Cook on a medium heat till the onion turns golden brown.
  • Now add ginger and garlic paste, cook for 2 minutes until raw flavor gone away.
  • Now Add the chopped tomatoes and mix well. cover the pan and cook on low medium heat till the tomatoes are soft.
  • Meanwhile  take a bowl, add turmeric powder, kashmiri red chili powder, cumin powder, coriander powder and mix with water. Prepare a paste out of it.
  • Open the lid and check the tomatoes.
  • When tomatoes are soft, pour the mixture and cook till the mixture dries up and the masala leaves the sides.
  • Now add in shredded chicken pieces. Cook really very well with other spices for 2-3 minutes. Be careful so that the chicken pieces do not get burn.
  • Now add 3 cashew paste and whisked yogurt. Stir well.
  • Add 1 cup of stock to cook well.
  • Then add fresh cream followed by butter and kasuri methi. Give a nice mix.If the chicken is dry, add little more water. Cook for another 5 minutes on very slow flame until the chicken bharta looks thick and creamy.
  • Finally add chopped eggs and coriander. Lightly mix.
  • Plate up and garnish with egg.



  • Give good time to shred the chicken. Long thin shredded chicken makes a good chicken bharta.
  • Take chicken with bones, as the bones imparts flavor to the dish.
