Designer Kheerer Patishapta – Patterned Patishapta – Rangeela Patishapta – Bengali Crepe With Kheer Filling

Instructions

1. First make the inner filling - "kheer". Boil the milk on low flame until it reduces to 1/3 volume. it will take time. Scrape the side down while reducing milk.
2. Then add jaggery and left over sondesh mix. Stir continuously until it becomes dense and dries up completely. Keep this aside. Our khova kheer/ khova is ready.
3. Now make patishapta batter. Mix maida, rice flour, sooji, salt and sugar.
4. Pour water slowly and make a semi thick consistency batter like pan cake batter. Our patishapta batter is ready. This is our base batter.
5. Now take out 2 big spoons of batter in six different small bowls.
6. Add different color of your choice in each bowl ( I used orange, yellow, green, blue, violet and cocoa powder for chocolate brown). If you are not comfortable using color, then use only cocoa powder for chocolate color. Mix color properly.
7. Put the colored batter in different piping bags or ketchup bottle.
8. Now heat a non stick frying pan. Grease with ghee and oil mix.
9. Now make pattern of your choice using colored batter. You can make some criss cross pattern, flower, butterfly or anything. Be creative.
10. When you are happy with your created pattern, vover with lid for 2 seconds.
11. Then pour the plain patishapta on the top of pattern.
12. Spread over the patterns.
13. Cover with lid again to dry out the surface.
14. Then place kheer filling in one corner.
15. Fold gently like a roll.
16. Our Designer Patishapta is done.
